The main difference of oysters is their size. As for the concave oysters, they are classified as follows: № 5 – № 4 – № 3 – № 2 – № 1 – № 0 – № 00). № 00 mean the biggest size and № 5— the smallest. The most popular size in Europe is № 3 (the oysters weighting 80-100 g).

Regarding the origin, there are sea oysters (that spend their whole life in the sea) and so-called “affiliated” oysters (that live in a specially created artificial environment).

The most popular kinds of oysters are “Fine de Claire”, “Special” and “Belon”.

The homeland of the oyster “Fine de Claire” is the south of France. They are grown in the sea (in shallow water), and the shells must be placed very close to each other, so that the oyster can get enough light (which creates their unusual taste).

The sort “Special” is grown in Normandy. They differ from the other in that they a bit fatter and taste like nuts.

“Belon” is an artificially developed sort of oysters from Holland. Its salty taste reminds of the sea.
